Chewy Nut-free Granola Bars

 
 

INGREDIENTS:

3/4 cup oats

3/4 cup dates, pitted and pressed into measurement

1 cup water

1/4 chia seeds

1/4 cup flax seeds

1/2 dried fruit of choice, chopped raisins/cranberries/mango/mix

1/3 cup raw sunflower seeds

1/3 cup raw pumpkin seeds

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground cardamom

1/2 teaspoon salt

 

HOW TO:

Heat oven to 325 degrees. Rub coconut oil into an 8x8 baking dish.

In VitaMix (or equivalent) grind oats into a flour. Place oat flour into medium size bowl. Combine spices and seeds.

Without cleaning VitaMIx puree dates and water.

Pour date solution into flour/seed mixture. Mix well. 

Smooth into oiled baking dish, making sure the mixture is even. Bake for 25-35 minutes. Let cool- compleeeeetely. Then cut into granola bar size. 

I like to double the recipe and put some in the freezer to save for a rainy day. The bars will last a week or so in the fridge.
